Italian Dining and Live Jazz Drive Non-Resident Revenue

A seasonal Italian menu and a weekend programme of live jazz and blues have established The Chatsworth restaurant as a destination for the local Eastbourne market, not simply an amenity for residents.

Historically the dining room traded almost entirely to guests staying in the hotel, leaving significant capacity unused midweek and on weekend evenings. Opening the restaurant and piano bar to non-residents required a distinct identity, separate marketing and a service model that could handle both audiences.

The results have lifted total food and beverage revenue well beyond what rooms occupancy alone would support, and the bar now contributes meaningfully as a profit centre in its own right.
